Sweet potato chocolate cake

  • 125g Rolled oats

  • 100g ground almonds

  • 2tsp baking powder or 1tsp and 1 egg

  • 2tbsp olive oil

  • 1tsp vanilla extract

  • One cup chopped dates

  • 340g of boiled sweet potato with skin

  • Optional splash of plant/milk

  • Optional chopped nuts for the top


  1. Preheat the oven to gas mark 4

  2. Blitz the oats in a food processor until it looks like rough flour then place in a bowl with the baking powder and ground almonds

  3. Boil grated sweet potato until soft and set aside until cool

  4. Add olive oil, vanilla, (egg) and sweet potato to the food processor and pulse until creamed

  5. Add dry ingredients from the bowl

  6. Depending on how well the mixture has come together you may want to add a splash of milk (especially if you didn't add the egg)

  7. Stir in chopped dried fruit

  8. Pour mixture into a well greased loaf tin or use a muffin tin

  9. Sprinkle nuts and seeds on top

  10. Bake for 45mins if loaf or 30mins for muffins

  11. Leave in the tin 5-10 minutes then turn out on a cooling rack
