Burmese tofu part 2

Take your tofu out of the fridge and cut a slice or slices depending on how many portions you want to prepare. Fold a clean tea towel and 2-4 sheets of kitchen roll and place the tofu on top.

Fold the kitchen towel and towel over the top and place something heavy on top, like books. (If you have a tofu press then just use that)

Leave for 30minutes, check it and repeat, replacing the kitchen towel if necessary.

Cut into squares

Warm 2tbsps of peanut butter (I use Meridian smooth) in a saucepan with 1tsp of garlic (I use gia).

Throw in the tofu and coat with garlic and peanut butter. This is now ready to serve with stirfry or salad, wrapped or unwrapped.

There are thousands of tofu recipes out there, just substitute soya bean tofu for Burmese tofu and enjoy.
